This creamy, bold enchilada pasta recipe combines Mexican flavors with hearty pasta for a perfect one-pot meal. Ready in 30 minutes!

  • Total Time: 30 minutes
  • Yield: 4

Ingredients

  • Ground Beef (1 pound): A classic choice, but feel free to use ground turkey for a leaner option.
  • Enchilada Sauce (20 ounces): Adds the signature Mexican flavor. You can use mild or spicy, depending on your heat preference.
  • Taco Seasoning (3 teaspoons): A blend of cumin, chili powder, and garlic powder gives the dish a bold, savory kick. If you don’t have pre-made seasoning, mix these spices yourself.
  • Beef or Chicken Broth (2 cups): The liquid base that helps cook the pasta and build the flavor. Either works great, depending on your preference.
  • Rotini Pasta (8 ounces): This spiral pasta absorbs all the sauce while maintaining a great texture. You can substitute with penne or fusilli.
  • Cheese (1 ½ cups): Monterey Jack, Colby, or Cheddar add a creamy finish. The cheese melts into the sauce, giving it richness.
  • Optional Ingredients: Add-ins like cream cheese, corn, and green onions can elevate the texture and taste of the dish.

Instructions

  • Sauté the Onions and Ground Beef
Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the diced yellow onion and sauté for 2-3 minutes until they start to soften.
Next, add the ground beef (or turkey, if you’re using that). Break up the meat with a spoon as it cooks. After 5-6 minutes, when the meat is no longer pink, you’re ready to move to the next step.
  • Add the Seasoning
Stir in the taco seasoning mix (or a combination of cumin, chili powder, and garlic powder). This is where your dish starts to get its signature enchilada flavor. Let the spices cook for an additional minute to really blend with the beef and onion mixture.
  • Incorporate the Liquid and Pasta
Add the enchilada sauce, broth, and dry rotini pasta into the pan. Stir everything to combine, ensuring the pasta is submerged in the liquid. Cover the pan and bring it to a boil, then reduce the heat to a simmer. Let it cook for 15-20 minutes, stirring occasionally until the pasta is tender and has absorbed most of the liquid.
  • Add Optional Ingredients
If you’re using optional ingredients like sour cream, cream cheese, or corn, stir them in just before the last 2 minutes of cooking. This is when the pasta will have the perfect creamy texture.
For a richer sauce, adding cream cheese will give it a velvety finish, while corn adds a sweet pop of flavor.
  • Stir in the Cheese
Remove the skillet from heat and stir in the shredded cheese until it melts into the pasta. The cheese will thicken the sauce and bind everything together beautifully.
  • Garnish and Serve
Top the dish with your favorite garnishes like diced tomatoes, green onions, cilantro, and black olives. These fresh toppings add a nice contrast to the creamy, cheesy pasta. Serve immediately and enjoy!

Tips for Serving and Presentation

Presentation matters, especially if you’re serving guests. Here are a few tips:

  • Garnish Generously: Top with fresh cilantro, diced tomatoes, and green onions for a pop of color.
  • Serve in a Skillet: Keep it rustic by serving directly from the skillet.
  • Add a Side: Complement this hearty pasta with a fresh green salad or a side of tortilla chips and guacamole for a complete meal.
