Ingredients
Scale
- 2 cups crushed Doritos, any flavor
- 1 cup cheddar cheese, cut into small cubes
- 1/2 cup flour
- 2 eggs, beaten
- Oil for frying
Instructions
- Set up your assembly line
I like to start by prepping my bowls: flour in one, beaten eggs in another, and crushed Doritos in the third. The key here is to keep the coating process efficient, especially if you’re making a big batch. Don’t worry if the Dorito crumbs get a little eggy—it happens! - Coat the cheese cubes
Take a cheese cube and roll it in the flour. This helps the egg stick. Dip it in the beaten eggs, making sure it’s fully coated. Then, roll it in the crushed Doritos. If you’re looking for extra crunch (and trust me, you are), repeat the egg and Dorito coating a second time. Just be careful not to handle the cubes too much, or they’ll start to lose their shape. - Heat the oil
Heat your oil over medium heat until it reaches about 350°F (if you don’t have a thermometer, no worries—just drop a crumb in, and if it sizzles, you’re good to go). You don’t need to deep fry these; just enough oil to cover half the cheese cubes is fine. - Fry until golden brown
Place the coated cheese bites in the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes, flipping them gently to ensure they get golden on all sides. You want that nice crispy exterior while keeping the cheese inside gooey. - Drain and serve
Once fried, transfer your cheese bites to a plate lined with paper towels to absorb any excess oil. Serve immediately while they’re still warm and gooey inside!
Notes
Serving suggestions for the ultimate snack spread
When it comes to serving these bites, presentation is key! Arrange them on a platter with some small dipping bowls of ranch dressing, salsa, or even marinara. If you want to get fancy, sprinkle a little fresh parsley on top for a pop of color. These are best served hot, so if you’re making them for a party, try to fry them up just before everyone arrives.
