Ingredients
Scale
- 1 1/2 cups graham cracker crumbs (about 10 full graham crackers)
- 1/2 cup (1 stick) butter, melted
- 1 (14 oz) can sweetened condensed milk
- 1/3 cup pumpkin puree (not pumpkin pie filling)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 cup sweetened flaked coconut
- 1 cup chopped walnuts (or pecans, if preferred)
- 1 cup chocolate chips (milk or semi-sweet)
- 1 cup pumpkin spice morsels (optional, but highly recommended)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it or lining it with foil or parchment paper.
- Prepare the crust: Melt the butter in a small saucepan over low heat or in the microwave. In a medium bowl, mix the melted butter with the graham cracker crumbs until fully combined. Press this mixture firmly into the bottom of your prepared baking pan to form an even layer.
- Make the pumpkin mixture: In a separate bowl, whisk together the sweetened condensed milk, pumpkin puree, cinnamon, nutmeg, and allspice until smooth and well blended.
- Assemble the bars: Pour the pumpkin mixture evenly over the graham cracker crust. Sprinkle the flaked coconut, chopped walnuts, chocolate chips, and pumpkin spice morsels evenly over the pumpkin layer. Gently press down the toppings with your hands or a spatula to ensure they adhere to the filling.
- Bake: Place the pan in the preheated oven and bake for about 25 minutes, or until the top is golden brown and the edges are slightly bubbly.
- Cool and cut: Allow the bars to cool completely in the pan before slicing into squares. For clean cuts, use a sharp knife and wipe it between slices.
